I've been asked for my recipes for the chicken wings and mango salad I made tonight. So, here they are.
Please keep in mind that I rarely measure when I cook (baking is quite another story) so I am guess-timating. You will, of course, adjust quantities and ingredients to suit your taste.
Spicy Thai-style Chicken Wings
• 20 chicken wings—the full thing, not split apart
• some cracked black pepper (to taste)
• 2 teaspoons (or so) of ginger, freshly grated or finely chopped
• 2 cloves of fresh garlic, finely chopped
• 1 teaspoon of sugar
• ¼ cup soy sauce
• splash of vegetable oil
• juice of one lime
• fresh cilantro to taste
• chili garlic paste, to taste (how much heat do you like?)
• slices of lime for garnish
1. rinse and dry the chicken
2. mix all other ingredients in glass bowl
3. add chicken for at least an hour
4. preheat oven to 450º F
5. place marinated chicken in single layer on baking sheet
6. cook in preheated oven for roughly 20 minutes
7. serve with slices of lime, sweet-and-spicy dipping sauce, and a Spanish Garnacha
Mango Salad
• 2 medium size ripe mangoes
• 2 cloves of garlic, finely chopped
• fresh cilantro, roughly chopped, to taste (I use about two tablespoons chopped)
• 2 teaspoons (or so) fresh ginger, finely chopped
• juice of 1 lime
• Romaine lettuce
• a sprinkling of sugar, if you like
1. squeeze lime into a glass bowl
2. peel the mango, dice it, and add it to the bowl
3. add garlic, cilantro, and ginger, then stir to combine
4. season to taste with sugar (sometimes I add a little salt)
5. chill well before serving
6. break up lettuce and spoon mango over top
7. serve with your spicy Thai-style chicken wings
